      With all prime beef carcasses there is always 20% of the available meat processed as mince and or sausages. At the end of your selection on the right, you will have the option to choose your preferred ratio of mince to sausages. Eg 30:70 is the same as 30% mince and 70% sausages, whereas 50:50 is a balance of mince and sausages. The ratios shown are always mince percentage and then the sausages percentage. All our beef is hung for a minimum of 10 days to improve its flavour and tenderness.
