A great accompaniment to the roast dinner. A simple way to cook the potato and kumara.
Put equal amounts of peeled and diced potato and kumara in a bowl with half a lemon for every 2 potatoes and kumara. Cover the bowl with glad-wrap and put in the microwave to cook. Do not put any water in the bowl. When the potato and kumara are soft to mash put half a tablespoon of sour cream per potato and kumara. Sprinkle with any herbs you chose for taste and mash with a fork until smooth. You may add more sour cream if needed. A simple and quick way to make a tasty mashed potato dish with a flavour that adds to the meat dish.
